The winery
Respecting the environment and maintaining ecological balances have been the guidelines that led to the building of the new Pomario winery.
Created from the renovation of the former tool shed, this state-of-the-art winery keeps the farmhouse style, and, where possible, original materials have been recycled.
The different processing, aging and bottling areas are functional, clean and equipped with modern environmentally friendly systems for the control of essential parameters for the production of high quality wines.
The processing room is equipped with temperature-controlled stainless steel tanks that allow monitoring individually the different stages of the winemaking process and respecting the different harvesting times, ranging from the beginning of September for the Rosato to the end of October for the Noble Mold.
A zero-emission geothermal well controls temperatures and photovoltaic panels help the electrical system;
they have been placed on the top of the farm car park in order to avoid covering farmland and guarantee the lowest possible visual impact.
The “Barricaia”, the aging room for the wines, is totally underground and equipped with a natural thermal-controlled system to maintain the right humidity and temperature all year round.
Completely underground, it is equipped with a natural thermo-hygro system that allows for naturally constant temperatures and humidity in all seasons.
In this room there are Barriques, Tonneaux and big oak casks made by small artisans and designed to meet the aging needs of wine.
Finally, the space dedicated to bottling and packaging is equipped with the latest generation equipment.
The early harvest is manual and the olives are cold pressed directly at the farm within the first 3 hours from the collection.
The vineyards
Originally there was only one hectare of vineyard located in the highest part of the property with old varieties of Sangiovese, Trebbiano and Malvasia.
The biodiversity present in the old vineyard was very important and, in the first years of operations, Susanna and Giangiacomo Spalletti Trivelli have pledged to recover all the plants by vigorous pruning and careful restoration.
Today, three hectares of old vineyard are cultivated with Sangiovese, Trebbiano and Malvasia with the addition of 3000 square meters of a clone of Bordeaux Merlot.
At the moment there are 9 hectares in production. 4 hectares are located on the first hill, divided in The old vineyard and the new vineyard both cultivated with Sangiovese, Trebbiano and Malvasia grapes; 3000 meters are implanted with a bordeaux clone of Merlot and 8000 meters, called Le Terrazze due to the terracing conformation, where Sauvignon Blanc and Rhine Riesling grow only for the production of the dessert wine Muffato delle Streghe.
Other 5 hectares are located on the second hill and are divided in 4 vineyards:
Il Ventaglio, La Selva Piana, Il Ghiro and La Radura.
All of them are on steep slopes, with a stony soil, dedicated to white grapes as Grechetto and Trebbiano as well as to some small quantities of Vermentino, Incrocio Manzoni and Chardonnay.
La Radura, a unique plot of 2,5 hectares in the middle of the woods, flat and fresh, dedicated to the growing of red grapes, mostly Sangiovese but also Ciliegiolo, Malvasia Nera, Foglia Tonda, Colorino and Alicante.
