THE WINE: Organic wines from the territory

Pomario’s wines are a clear expression of the terroir and have in common the saltiness coming from the deep fossil soil.
Their freshness and elegance is due to the combination of height (500 m.above sea level) and exposure to the sun with fresh autumn nights and warm days. This special microclimate, together with the embracing and protective woods surrounding the vineyards, create a perfect habitat and conditions for organic agriculture.
The vineyards dedicated to the growing of red grapes are implanted mostly with Sangiovese but also with Ciliegiolo, Malvasia Nera, Foglia Tonda, Colorino and Alicante.
The white grapes are Grechetto and Trebbiano as well as small quantities of Vermentino, Incrocio Manzoni and Chardonnay. Sauvignon Blanc and Rhine Riesling grow on the terraced vineyards solely for the production of the dessert wine Muffato delle Streghe.

SARIANO Umbria Red I.G.T. ORGANIC WINE

The quality of the old grapes, with a small productivity of only 40 quintal/hectar, has been immediately used for the production of Sariano.
The grapes are selected in the vineyard pruned both for a low productivity and selective thinning.
Once harvested the grapes are immediately de-stemmed and fermented in steel vats with a capacity of 25hl where the fermentation happens at a controlled temperature.
In this phase the only operation is pumping of the must over the grape dregs.
At the end of the fermentation and of the long maceration which can vary between 25 and 45 days, according to the quality of the skins, the wine is poured into 25hl oak barrels where the malolactic fermentation takes place.
The wine stays in the barrels along with the lees until March of the year after.
After the first decanting, the wine goes back into the barrels where it rests until the time of bottling, which takes place after a light filtration.

ARALE Umbria white I.G.T. ORGANIC WINE

Arale is the white wine produced in a vineyard made up of ancient varieties of Malvasia and Trebbiano, recovered from the old vineyard and cloned to realize the new one, where the old and new cloned grapes co-exist.
The grape production for Arale, after a careful selection in the vineyard, never exceeds 40 quintal/hectar.
The Trebbiano and Malvasia grapes are collected very early in the morning in October. They are immediately pressed before being transferred to the barriques to be fermented with the inoculation of autochthonous yeasts.
The fermentation is left to selfcontrol itself and the only operations are the daily batonage. The first rough dregs removal takes place only at the end of the alcoholic and malolactic fermentation.
Afterwards there are 4 dregs removals in order to obtain a clean wine ready to be bottled after a very light filtration.

MUFFATO DELLE STREGHE Umbria White dessert wine I.G.T. ORGANIC WINE

Strongly wanted by Countess Susanna and encouraged by the women of the Winery (Pomario’s witches), the Muffato delle Streghe (Witches), an unusual name for a special wine, is an alcoholic nectar, harmonious and well structured with the presence of honey, spices, candied fruits and caramel thanks to the Botrytis Cinerea (Noble Mould).
It is a Sweet wine excellent for desserts but can be also paired, thanks to the important structure, with Foie Gras, Seasoned and Spicy Cheeses.
The Vineyard, planted in 2010, with its terraces descending towards the woods, is ideal, thanks to the Riesling and Sauvignon Blanc vines, for the production of this kind of wine. In Autumn the fog remains on the terraces until the end of the morning, creating a bewitched atmosphere and clears slowly towards the woods leaving space to sunny and windy afternoons.
The Botrytis Cinerea requires specific climatic conditions: fog in the morning and sun in the afternoon because without a perfect balance between humidity and heat the noble mould doesn’t develop.
The harvest lasts several weeks since it requires the selection of the grapes that have reached the right amount of noble mould. The wine rests in wood for 2-3 years before being bottled only in 0.5 lt. format.

RONDIROSE Umbria Roseé I.G.T. ORGANIC WINE

Rondirose is the Rosé wine produced in Pomario. It is a young wine, very fragrant and fresh. Produced from Merlot and Sangiovese grapes that were located in the sunnier and windier part of the estate.
The Merlot and Sangiovese grapes are harvested when the acidity is still high and the skin has just began to lose color. Collected early in the morning the grapes are placed in a press and left to macerate for a few hours at a controlled temperature.
The must color is constantly monitored and drawn off with soft pressure only when it begins to intensify.
The fermentation activated by autochthonous yeasts continues in steel with controlled temperatures.
The finished wine is bottled after several decantings and a light filtration in order to maintain the color and aromas fresh if just harvested.

Rubicola

RUBICOLA Umbria Red I.G.T ORGANIC WINE

Rubicola is produced from Sangiovese, Merlot and other typical central Italian red grapes coming from a vineyard located in a sunny clearing surrounded by woods. The result of an early harvest and a natural vinification is a red wine fresh and sour.
After the Harvest, the must is left to ferment naturally in contact with the skins for a long period, refreshed from time to time with some delestage.
Once drawn off is left to mature in steel tanks. The winter cold facilitates the natural clarification without the use of products of animal origin. Bottled without beeing filtered between late winter and early spring is a red wine ready to drink. Cool, dry, slightly tannic and well balanced. Pleasant and fresh with sense of bergamot and rose hips. Excellent for aperitives and light meals, it can also be combined with freshwater fish or seafood soups.

BATTICODA White Umbria IGT ORGANIC WINE

Wine produced principally from Grechetto and other withe grapes coming from a very steep, rocky and sunny vineyard. Thanks to this particular terroir the grapes disclose their typical scents within the end of August.
After the manual harvest, the grapes are de-stemmed and immediatelly pressed. It follows a racking of the must in a steel tank where fermentation takes place freely. Taking advantage of the winter temperatures the new wine matures and clarifies in a natural way without the use of animal products.
Batticoda, naturally cleaned and stabilized, is bottled in winter without being filtered.
Slightly sourish and savory leaves a persistent slipperiness. This dry white wine is perfect as an aperitif and can also be paired with pasta, vegetarian dishes and fish.

Pomario ciliegiolo botttle

CILIEGIOLO

Pomario’s Ciliegiolo is a wine that embodies the essence of its territory. The grapes, sourced from a young vineyard perched on an isolated hill surrounded by woods, are harvested in mid-September. Following a gentle de-stemming, they are left to ferment in stainless steel vats. After devatting and a few weeks of decantation, the wine is transferred to first-use tonneaux where it matures for about a year. The tannin, characteristic of the grape variety, is made crisper through contact with the wood. This dense and compact Ciliegiolo exhibits a fruity aroma of blackberry and blueberry. The savory quality of the soil comes to the forefront on the palate and persists into the finish.

RADURA

The vines that give life to Radura were recently planted in the vineyard of the same name, characterized by cool, dense soil and fully immersed in the woods. It is a selection of native grape varieties typical of the area. Black Malvasia, Foglia Tonda, Colorino, and Sangiovese were grapes present in all the local “home” vineyards, and the technique of “uvaggio” (blending) allowed for a satisfying quality of harvest every year, regardless of seasonal variations. To these varieties, Alicante has been added, also known as Gamay of Trasimeno, which has perfectly adapted to this territory, becoming one of its most representative varieties. The grapes are harvested and vinified together at an intermediate stage of ripeness for the different varieties. After a long fermentation, the wine matures for 12 months in second-use tonneaux and then is refined for another year in ceramic Amphora.Radura is a full-bodied and smooth wine that displays distinctive and particularly persistent aromas and flavors, both on the nose and palate. The fresh citrus notes, along with the tertiary aromas and flavors, confer to this wine a great aging potential.

Extra virgin organic Olive oil

Pomario extra vergin olive oil is a blend of the three main cultivars produced in the region: Leccino, Moraiolo and Frantoio.
The plants are cultivated biologically using organic fertilization, the olives are handpicked and the juice is extracted through cold pressing.
Pomario extra vergin olive oil is intensely fruity, at the sight appears of nice emerald green.
To the nose presents rich fruity notes and to the taste is well-balanced with strong fresh grass tones. Intensely bitter and spicy but in a harmonic way, leaves a spicy aftertaste with a flavor of fresh olive.
